maple walnut date energy bites

These walnut date energy bites are made with simple ingredients that keep you full, including omega-3 fatty acids, polyphenols, and antioxidants. The best part? No baking or hot oven required! All you need is a food processor. Store these bites in an airtight container in your fridge for up to 5 days.

Ingredients
  

  • 2 cups raw walnuts
  • 1 cup old fashioned rolled oats
  • 8 pitted Medjool dates
  • 2 tbsp maple syrup
  • 1 dash cinnamon
  • 1 tbsp chia seeds
  • 1 tbsp ground flax seeds
  • 1 tsp vanilla extract
  • 1 dash salt
  • shredded coconut flakes (optional)

Equipment

  • Food processor

Method
 

  1. Add all the ingredients except the shredded coconut flakes (if using) into a food processor. Process until it's mashed together and sticky. You may have to pause the processor to stir the ingredients and process some more.
  2. Once the ingredients are thoroughly mixed, scoop about 1.5 tablespoon of the mix and form into a ball. Continue until you have used up all of the mix.
  3. If using coconut flakes, gently roll the balls over the coconut.
  4. Store in an airtight container in the refrigerator for up to 5 days.
